The berries are separated from the seeds and slowly cooked without adding thickeners or preservatives, preserving the authentic taste and nourishing qualities of the elderberry. How to Use:

Perfect for breakfast and filling cakes and pastries, also ideal as a tasty topping. Add a spoonful on ice cream, yogurt, or panna cotta for a surprising dessert.

Elderberry Jam Filled Cookies

Ingredients:

  • 250g all-purpose flour
  • 125g cold butter, cut into cubes
  • 100g sugar
  • 1 whole egg
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • Elderberry jam (amount as desired)
  • Powdered sugar (for garnish, optional)

Instructions:

Dough preparation:

  • In a large bowl, mix the flour with the sugar, baking powder, and salt.
  • Add the cold butter cubes and work the dough with your hands or a mixer until it resembles crumbs.
  • Add the egg and quickly work the dough until you get a smooth, homogeneous ball.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

Cookie preparation:

  • Preheat the oven to 180°C (350°F).
  • Roll out the dough on a lightly floured surface to about 3-4 mm thickness.
  • Cut the dough into discs about 5 cm in diameter using a cookie cutter or a glass.

Assembly:

  • Place a teaspoon of elderberry jam in the center of half of the dough discs.
  • Cover with the remaining discs and seal the edges by pressing gently with a fork.

Baking:

  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies are lightly golden.

Cooling and garnishing:

  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • If desired, dust with powdered sugar before serving.

Storage method: The product can be stored at room temperature until opened. Once opened, keep refrigerated. It is recommended to consume within 30 days.
