Recipe: Midnight Spaghetti


  • 400g of spaghetti
  • 4 teaspoons of Midnight Spaghettata (1 teaspoon per person)
  • 4 tablespoons of extra virgin olive oil
  • 1/2 glass of pasta cooking water
  • Salt to taste


  1. Pasta Preparation:Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Preparation of the seasoning:While the spaghetti is cooking, heat the extra virgin olive oil in a large skillet over medium heat. Add the teaspoons of Spaghettata di Mezzanotte and fry lightly for 1-2 minutes, being careful not to burn the ingredients.
  3. Combination:Drain the spaghetti al dente, reserving 1/2 glass of the cooking water. Transfer the spaghetti to the pan with the sauce, add the cooking water and mix well to combine everything.
  4. Serve:Continue stirring for 1-2 minutes, until the spaghetti is well coated with the sauce and the sauce has thickened slightly. Taste and add salt if necessary.
  5. Presentation:Serve immediately, garnished with some chopped fresh parsley or a few basil leaves if desired.
