Spaghetti with 'Nduja sauce
Ingredients:
- 400g of spaghetti
- 1 jar of 'nduja sauce
- 2 tablespoons extra virgin olive oil
- 1/2 glass of dry white wine (optional)
- Fresh basil for garnish
- Grated Parmigiano Reggiano (optional)
- Salt to taste
- Black pepper to taste
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the spaghetti and cook according to package instructions until al dente.
Prepare the sauce:
While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat.
Pour the 'nduja sauce into the pan and, if desired, add the dry white wine.
Bring the sauce to the boil, then lower the heat and cook for about 10 minutes, stirring occasionally, until the sauce has thickened slightly and the wine has evaporated.
Combine the Pasta with the Sauce:
Drain the spaghetti al dente, reserving a cup of the cooking water.
Add the drained spaghetti to the pan with the 'nduja sauce.
Stir well to combine, adding a little pasta cooking water if the sauce seems too thick.
Garnish with fresh basil leaves and a sprinkling of grated Parmigiano Reggiano, if desired.
