Autumn salad, known in Calabria also as "salaturu," is a tasty preserve in oil made with a rich variety of fresh vegetables: carrots, eggplants, olives, green tomatoes, onion, fennel, cabbages, turnip, and chili pepper. The ingredients are soaked in extra virgin olive oil and enriched with vinegar, garlic, aromatic herbs, and salt, creating a blend of authentic and fragrant autumn flavors. This salad is ideal as a starter, side dish, or to enrich sandwiches and meat dishes, bringing to the table the taste and scents of Calabrian tradition.
